Magnus' recipe - Salad with meat and wheatberry

Cold sliced meat with wheatberry salad, sour cream with horseradish, grated raw beetroots, and roasted pumpkin seeds, 4 persons

 

Cold sliced meat

 

1.3 pounds of cold sliced meat (for example roast beef, salted, dried and smoked leg of lamb or another type of cold sliced meat)

 

Slice the meat thinly after it is prepared (cooked or roasted), or purchase the meat ready sliced.

 

 

Wheatberry salad

 

1.3 cups of wheatberry

2.3 cups of water

2 tablespoons of cold extracted rapeseed oil

½ tablespoon of chopped chive

1 teaspoon of salt

 

Boil the wheatberry in the water until all water is gone (15-20 minutes). Mix with oil, chive and salt.

 

 

Sour cream with horseradish

 

1.3 cups of sour cream

1-2 tablespoons of grated horseradish

1 tablespoon of hot mustard

1 teaspoon of honey

½ teaspoon of salt

 

Mix all ingredients together.

 

Serve with 6 ounces of  grated beetroot and a handful of pumpkin seed, gently roasted in a skillet without fat or oil.
